Sourdough Discard Pancakes

Great way to use up your discard by making fluffy pancakes!
Servings 16 pancakes

Ingredients
  

  • ½ C. sourdough discard
  • 1 ½ C. all purpose flour
  • 1 C. milk or buttermilk
  • 4 Tbsp. melted butter cooled
  • ¼ C. sugar
  • 1 egg
  • 2 Tsp. baking powder
  • ½ Tsp. salt
  • 1 Tbsp. vanilla

Instructions
 

  • Add the sourdough discard, milk, egg, butter, vanilla, and sugar to a bowl. Whisk well until just combined.
  • To the above mixture add flour, baking powder, and salt. Mix until combined and a bater forms.
  • Add in any optional inclusions you would like.
  • Heat a frying pan, greas with butter or spray.
  • Scoop into pan. (I like to use an ice cream scoop for less mess.)
  • Cook until desired doneness is reached. (Cook on a lower temp and allow bubbles to form on surface of pancake before flipping.)

Notes

  • protein powder (makes sweeter and may not need syrup)

Buttermilk
  • To make “buttermilk” just add a in 1 Tbsp. of lemon juice or vinegar to your cup of milk and let set for 10 minutes. 

Whole Wheat Banana Muffins

A "lightened" up version of traditional banana muffins.
Servings 12 muffins

Ingredients
  

  • 1 ½ C. whole wheat flour (can use all purpose)
  • 1 Tsp. baking soda
  • 1 Tsp. baking powder
  • ½ Tsp. salt
  • ¼ C. sugar
  • 3 bananas (over ripe and mashed)
  • 1 egg
  • C. butter (melted and cooled)
  • ¾ C. applesauce (can substitute extra banana)

Instructions
 

  • Preheat oven to 375°.
  • Mix smashed bananas, sugar, egg, butter, and applesauce in a bowl until combined.
  • Stir in flour, baking soda, baking powder, and salt.
  • Scoop into a greased muffin tin and bake for 15-20 minutes.

Notes

  • Can also add in nuts or chocolate chips.
This recipe can also be made into a loaf you would just need to increase the bake time. 

Sourdough Discard Sandwich Bread

The perfect recipe to use up sourdough discard. This recipe incorporates sourdough and yeast to make the perfect white and wheat combo sandwich bread. I got this recipe from allthingshome on YouTube.
Servings 1 Loaf

Ingredients
  

  • ½ C. warm water
  • C. sugar
  • 2 ¼ Tsp. yeast
  • 1 C. sourdough discard
  • 1 ½ C. whole wheat flour
  • 1 C. all purpose flour
  • 2 Tbsp. oil
  • ¾ Tsp. salt

Instructions
 

  • Dissolve the sugar and yeast into the warm water.
  • After the yeast is activated (got frothy) mix all the ingredients together and knead in the base of a stand mixer or by hand for 10 minutes.
  • Place the ball of dough in a greased bowl. Cover with plastic wrap and let rise in a warm place for 30-60 minutes or until doubled in size.
  • Once doubled punch down the dough. Form dough into a loaf shape and place in a greased loaf pan to rise again for about 60 minutes.
  • Lastly, once dough has risen bake at 350° for 25 minutes.
  • If you want to soften the bread more you can butter the top after pulling it out of the oven.
  • IF possible wait until it has cooled down to slice and enjoy!

Notes

When making these loaves I typically leave them plain. But, you also can add in sugar, cinnamon, and/or raisins to make a sweet loaf. 

Sweet Banana Muffins

Buttery sweet banana muffins.
Servings 12 muffins

Ingredients
  

  • 1 ½ C. sugar
  • ½ C. meted butter
  • 2 eggs
  • 3 mashed bananas
  • ½ tsp. vanilla
  • ¼ tsp. baking powder
  • ½ tsp. baking soda
  • 1 ½ C. all purpose flour

Instructions
 

  • Preheat oven to 350°.
  • Mix together the mashed bananas, sugar, eggs, butter, and vanilla.
  • Then add the baking powder, baking soda, and flour and mix until combined.
  • Scoop into greased muffin tin and bake for about 20-25 minutes. Insert toothpick and when it comes out "clean" they are done.

Notes

You can reduce the sugar in the recipe for a little less “sweet”.
You can also mix in nuts or chocolate chips before baking.
This makes a great loaf of bread also. Just increase baking time. 

Hamburger and Hot Dog Buns

Servings 8 Buns

Ingredients
  

  • 2 Tsp. yeast
  • 2 Tbsp. sugar
  • 1 C. milk (warmed)
  • 2 ¾ C. Flour
  • ½ Tsp. salt
  • 2 eggs
  • 3 Tbsp. butter

Instructions
 

  • Mix the yeast, sugar, and warm milk together. Let sit about 5 minutes until proofed.
  • Combine 2½ cups of the flour and salt to a mixing bowl and mix well.
  • Add the proofed yeast mixture, one egg, and melted butter to the bowl of dry ingredients.
  • Mix until a shaggy dough forms. Cover and let rest for 5 minutes.
  • Add remaining flour and knead until the dough comes together.
  • Place dough in a greased bowl and cover for 30 minutes to let rise.
  • After 30 minutes punch down the dough and transfer onto a slightly floured surface.
  • Divide the dough into 8 equal pieces. Form into 6 inch long rolls for hot dogs. Then for hamburgers form into round rolls and slightly smash down.
  • Place the buns seam side down on a parchment lined baking sheet.
  • Whisk up the last remaining egg and brush on the tops of the buns. You can also sprinkle seasonings, seeds, or cheese on the top.
  • Cover the rolls with plastic wrap.
  • Preheat oven to 350°.
  • After 15 minutes of rising or the oven is preheated bake for 12-15 minutes.
  • These are better cooled completely before slicing for buns, They are also great leftover.

Drop Biscuits

Easy biscuits for when you do not feeling like rolling and cutting them out.

Ingredients
  

  • 2 C. flour
  • 1 Tsp. baking soda
  • 2 Tbsp. sugar
  • ¼ Tsp. salt
  • ½ C. melted butter (cooled)
  • 1 C. milk

Instructions
 

  • Preheat your oven to 425°.
  • Mix together the flour, baking powder, sugar, and salt in a bowl.
  • Then add in the butter and milk until just combined. Do not over mix.
  • Drop heaping tablespoons of the mixture onto a greased or parchment paper lined pan.
  • Bake for 10-12 minutes. Or until they start turning a golden brown. Sometimes they take a few minutes longer to cook if I have done larger biscuits.

Quick Pizza Dough

This is by far the easiest home made pizza dough I've ever made. Its no knead, no rise, and pretty much fail proof. A single batch will make one large sheet pan pizza or 2 smaller pizzas.

Ingredients
  

  • 2 ¼ Tsp. yeast or 1 package
  • 2 Tbsp. honey or sugar
  • 1 C. warm water
  • 2 ½ C. flour plus more
  • 2 Tbsp. olive oil
  • 1 Tsp. salt

Instructions
 

  • Preheat oven to 450°.
  • In a large bowl or stand mixer combine warm water, honey or sugar, and yeast.
  • Let set for just a few minutes until it becomes frothy.
  • Then add in the flour, olive oil, and salt. Mix together and it should form a fairly firm ball. If not add more flour just a tablespoon at a time.
  • Let the dough rest for a few minutes while you gather your toppings and get your pans ready.
  • You can roll dough out and make one large sheet pan, individual pizzas, or our favorite. Splitting the dough in half and making 2 cast iron pizzas.
  • You can add your toppings as soon as its rolled out or prebake your crust first. We prefer to poke holes in our crust with a fork and bake for a few minutes then pull back out of the oven, top, and bake until it starts to brown. Cooking time will vary on thickness.

Notes

This is a favorite of the kids. They enjoy rolling out their own dough and adding their  favorite toppings. Hope you enjoy!
